The word mousse means “foam”, referring to the airy structure created when whipped cream is carefully folded into a delicate base.
For this dessert, taro is gently cooked and puréed until smooth, then blended with coconut milk and fresh dairy. The base is lightly stabilized with gelatin before being folded with softly whipped cream to create a mousse that is:
