This mousse was inspired by a quiet moment often found in East Asian tea culture — a warm cup of oolong tea paired with fresh longan fruit in the late afternoon.
Longan has a naturally delicate sweetness with a floral, honey-like aroma. When paired with gently infused oolong tea, the result is elegant and balanced — a dessert that feels light, fragrant, and quietly luxurious.

The Craft of Mousse
