This mousse was inspired by a quiet moment often found in East Asian tea culture — a warm cup of oolong tea paired with fresh longan fruit in the late afternoon.

Longan has a naturally delicate sweetness with a floral, honey-like aroma. When paired with gently infused oolong tea, the result is elegant and balanced — a dessert that feels light, fragrant, and quietly luxurious.

The soft golden tone of the mousse reflects the color of brewed oolong, while the fresh longan on top glows like small pearls resting on the surface.


The Craft of Mousse

Mousse originates from French pâtisserie, where texture is considered as important as flavor.
The word mousse means “foam” in French, describing the airy structure created when whipped cream is folded into a delicate base.

For this dessert, oolong tea is slowly infused into cream to capture its floral aroma. Fresh longan purée is then blended with dairy and gently set with gelatin. The mixture is folded carefully to maintain its light structure.
